Key West Barbeque Sauce

Makes ten cups (so you can slather it on everything)

  • 3 cups ketchup
  • 2 cups (packed) dark brown sugar
  • 3/4 cup each of the following juices: mango, passion fruit, orange, pineapple -- or you can just use a tropical blend
  • 1/2 cup cane syrup
  • 1/2 cup each of the following juices: lime, lemon, grapefruit
  • 1/4 cup finely grated onion
  • 1 1/2 T. dry mustard
  • 1 1/2 t. ground pepper
  • 1/2 t. cayenne pepper
  • 1/2 t. salt
  • 1/2 t. ground cumin
  • 3 T. cornstarch

Whisk all ingredients except the cornstarch in a heavy large sauce pan. Transfer 1/4 cup of the sauce mixture to a small bowl; add cornstarch and stir until dissolved, then whisk cornstarch mixture into the sauce mixture. Cook on medium-high heat until sauce comes to a boil and thickens, stirring constantly. use to coat any kind of meat for grilling, and serve at the table for dipping.
