CHILLI CHICKEN
INGRIDIENTS
-----------
Chicken 	- 1/2 Kg
Onion   	- 1 
Green Chillies 	- 4 
Capcicum	- 1 
Tomato Sauce	- 2 Table Spoon
Chilli Sauce	- 2 Table Spoon
Soya Bean Sauce - 3 Table Spoon
Oil		- 3 Table Spoon

Add 3 Table spoons of Oil in a Pan Cook till oil Boils . 
Add Chicken and Salt and Fry till it turns golden brown . 
Add 3 Table Spoons of Soya Sauce , 2 Tb Spoon Chilli Sauce , 
2 Tb Spoon Tomato Sauce .Put finely chopped onion and capcicum 
and cook till well done . 

GARLIC CHICKEN
Ingredients:

1 /2 KILO chicken 
1 cup plain yogurt
4 green chilies
1 medium sized onion (finely chopped)
1 small root of ginger
3 cloves garlic
Salt and black pepper to taste
4 tbsp oil
CORRIANDER LEAVES for garnishing
 
Method:
-------
Blend green chilies, ginger, garlic, and black pepper to a fine paste. 
Add yogurt to this mix. 
Marinate chicken  with the above mix and leave it for an hour. 
In a non-stick pan, heat enough oil and let onions fry until brown. 
Add chicken  to the onions and fry them until done. 
Add some salt to taste and garnish with CORRIANDER LEAVES

CHICKEN ROAST
Ingredients:
------------
Chicken -1 kg
Ginger paste-2tbsp
garlic paste-2 tbsp
chillie powder-2 tbsp
turmeric powder-1 tsp
egg-2
vinegar
 
Method:
--------
Mix everything.Keep aside for 1 hour(marinate). Deep fry in oil.


BATURA
Ingredients:
------------
Maida-3 cups
Butter-3 teaspoon
Sugar-2 tsp
Curd-1 tbsp
Soda-1 bottle(add only required quantity)(if not availabe just add 
baking soda and water)
 
Method:
-------
 mix everything.keep aside for an hour.make into medium sized 
balls.roll out into chappathis and fry in oil.


PRAWN BALL IN SAUCE
Ingredients:
------------
ONION-1(Cut into very small pieces)
red chillies-1(,,)
garlic-1tsp(,,)
ginger-1 tsp(,,)
capsicum-1
for the batter
     egg-1/2
     maida/flour-2 tsp
     cornflour -1 tsp
     salt- a pinch
     soda bi crbonate-a pinh(if available)
FOR THE SAUCE
    SOYA SAUCE-1 TSP
    tomato sauce-1tsp
    vinegar-1 tsp
    chilly sauce-1/2 tsp

Method:

 Cook prawns in some water.strain out the prawns,keep 
the water aside.Make a batter(paste)with egg,maida,
cornflour,salt,soda-bi-carb .Add prawns to it and mix 
well(no need to add water).Heat oil.Make the mixture into 
small balls and fry.keep aside

FRY ONION IN OIL,ADD CHILLies,GARLIC,ginger AND CAPSICUM.
fry a little ,add all the sauces and fried prawns.And 
cook till done.


PRAWN FRY
Ingredients:
------------
prawns-1/2 kilo
pepper powder-1/4 tsp
chillie powder-2 tsp
turmeric powder(manjal podi)-1tsp
ginger garlic paste-1/2 tsp
salt to taste
 
Method:
-------
mix everything together,add little water and cook till dry(vevikkuka).
heat oil add, onions -1 sliced,green chillies-2 (slit into half) and 
the prawns.Deep fry.


VEGETABLE CURRY (FOR CHAPPATHI)
Ingredients:
------------
potato-1 (cut into small squares)
carrot -1/2(,,,)
beans-2(,,,)
 boil these
corriander powder-1 table spoon(medium sized spoon)
chillie powder-1 tsp(small spoon)
 massala powder-1 tsp(chicken massala powder which you have)
tomato -1 
green chillies-2
onion-1(small)
coconut milk -1/2 cup (or desired)
 
Method:

heat a little oil.saute(vattuka) onion and green chillies.Put all the 
massala and saute.put  tomato and boiled vegetables.add coconut milk and 
remove from fire.add some sliced corriander leaves(malli ila).


TOMATO CURRY (FOR RICE)
Ingredients:
------------
Tomatoes-2(cut into 4)
Green chillies-2(sliced to 2)
 big onion(sabola)-1 (chopped finely)
ginger (inchi)-1 small piece(chopped finely)
vinegar(1 tsp)(you will get it in local stores)
coconut milk- 1 cup
salt

{chilliepowder-2 tsp,corriander powder(malli podi)-1 tsp}mix this 
massala together and heat a little.
 
Method:

In a pan  take green chillies,ginger, small onions,salt,coconut milk 
and the mixed massala powder.stir and boil it.add vinegar if needed.cook 
until done.

CABBAGE THORAN
Ingredients:
------------
cabbage-1/2 piece
Big Onion-1
green chillies-1
grated coconut(only if frozen is available,otherwise don't add 
it)-little
turmeric powder-1/2 tsp
salt
mustard seeds(kaduku)-1/2 tsp
 
Method:
-------
Heat 2 tbsp oil.put mustard seeds(kaduku pottikuka).add all the other 
ingredients,mix well,close with a lid and cook on slow fire till steam 
comes.then open it and cook until done

PEPPER CHICKEN
Ingredients:
------------
Chicken -1 kilo
Tomato-100 gm/2 nos
Big onions-250 gms/4 nos
Corriander powder-1 tsp
Chillie powder-2 tbsp
Turmeric powder-1/2 tsp
ginger-garlic paste-2 table spoon
salt
pepper powder
dalda/vanaspati/margarine(if available or oil will do)-quantity needed
 
Method:

Take a little oil,saute onions(that is sabola vaattuka) Add tomatoes 
and saute(vaattuka).Add ginger garlic paste(inchi veluthulli paste).Add 
corriander powder(malli podi),turmeric powder(manjal podi),chillie 
powderand salt and cook again,add dalda .Add chicken and cook till dry.
add pepper powder according to your taste.


CHAPATHI
Ingredients:

WHEAT FLOUR 
 
Method:

mix wheat flour(gothambu mavu) and warm water,SALT.add little ghee if 
needed.knead the dough well.make into balls and roll out into chappathis

PAROTTA
Ingredients:
------------
FLOUR 
GHEE
SALT 
 
Method:
-------
mix flour(maida) ,warm water,ghee,SALT.knead the dough well.make into 
balls
roll out the balls into thin chappathis,pat on one side of chappathis  
with ghee mixed with oil.fold the chappathis like vishari and fold it 
again from two sides.put one on top of the other.roll out .cook on a 
tava.while cooking you may add ghee.


PURI
Ingredients:
------------
WHEAT FLOUR 
 
Method:
-------
mix wheat flour(gothambu mavu) and  water(DON'T USE WARM 
WATER),salt.knead well.make into small balls.roll into very thin chappathis.heat 
oil(oil should be very hot) and fry them.
